It’s been a while since I posted a recipe blog! Channa tarka dhal seemed like a great place to start.We’ve been thinking about been taking things back to basics with food, for two reasons: budget and including everyone in our little family. It’s no news that the cost of living has sky-rocketed. Food costs have increased, and so have gas and electricity costs. We’re learning to budget, alongside the costs of running a new house, and having a toddler. In terms of including everyone, thinking up and making daily food that we can all eat together is often no mean feat.

Our daughter is having a hard time with sleeping at the moment, and we feel grotty! We invented this cauliflower cheese pasta in a fit of enthusiasm for eating comforting food, and using the ingredients we have in the house.

I love an oat cookie, and I love how easy and quick these are to throw together. These are your classic slightly soft and chewy cookie, and are delicious made with either raisins or chocolate chunks studded through them. If you are doing veganuary for the first time, these cookies would be great to make – for you, and your family and friends! The ingredients are fairly easy to get hold of, and are available in most corner shops where we are based.
We love a lasagne, and there’s something about cosy meals cooked in a baking dish that feel a very good idea in cold weather. If you are taking part in veganuary for the fist time, can still make and enjoy lasagne.
Vegan cake is now more available than ever, but can cost a small nosebleed. This double chocolate muffin recipe is the ideal solution: these muffins are delicious, but also easy, cheap, and very swift to make. I’ve made them for a lot of people who didn’t realise they were vegan, which feels like the ultimate compliment.
